Delicious turkey Wellington stuffed with a colorful mixture of cranberries and wild rice and brie cheese. Bake in the oven until crisp and golden brown.
Wild rice, uncooked
Pre-heat oven to 400°F. Combine wild rice and cranberries with chicken broth and bring to boil. Cover and simmer until tender; drain any excess broth if necessary. Let cool and add chopped walnuts.
Place ¼ cup rice mixture onto each puff pastry sheet. Top with one brie slice, then one piece of turkey and one more brie slice.
Beat egg in a small bowl and brush over Wellingtons with a pastry brush. Bake for 20 min. or until golden.
