Garlic herb roasted turkey breast sautéed with bell peppers, onions, parsley, capers and pine nuts, drizzled with vinaigrette and topped with shaved Parmesan.
Red, green and yellow bell pepper, sliced
Red onion, sliced
Green beans, trimmed and blanched
Cucumber, peeled, seeded and sliced
Italian parsley, chopped
ACCOMPANIMENT AND DRESSING
Pine nuts, toasted
Parmesan cheese, shaved
Sauté turkey, peppers, onion, parsley, beans, pine nuts and capers in olive oil until warm. Season with salt and pepper.
Remove from heat and toss with vinaigrette and cucumbers.
